In class:

Activity: setting the table

Table Etiquette
1.       Take a look at the formal and informal table settings
2.       Napkins
A.      Unfold and place on your lap when you sit
i. don’t snap
ii. large napkins unfold in half
iii. never tuck in under chin (you will be given a lobster or crab bib, if needed.)
B.      Use frequently to pat or blot, not wipe
C.      Napkin rings
i.remove from ring and place top left
ii. at end of meal return to ring with pointy edge towards your plate
D.      Leaving the table
i.temporarily- place on your chair
ii. permanently-left of the plate
iii. always place soiled side down
3.       Serving a meal
A.      Formal
i.      Served on the left
ii.     Removed on the right
B.        Informal
i.         Dishes passed to the right
ii.       Serving utensils are on the right in the dish and returned to the same position
iii.      Carving knives are always placed inward
4.       Where to sit
A.      More than six guests?
i.      place cards
ii.     have a plan
B.      Generally
i.         Host sits at the head
ii.       Place of honor to the right (military, celebration, elderly, distinguished)
iii.      No purses at the table in a private residence
iv.     Never delay a meal more than 20 minutes
C.      When do I eat?
v.       When everyone is seated

Role Playing Exercise Directions
Choose a partner to work with and role-play the following: 
 You are going for a job interview for an office manager’s job.  
 1. First describe to each other how you would dress for the interview.
  2. As a pair, write out what you would need to take to an interview.
  *3) Now develop a list of questions that an employer might ask you. Think about open ended questions.
  4) Now role play the questions, taking turns as interviewer and interviewee. Place two chairs facing each other.  Begin with a handshake and a request to have a seat.
5) I will collect your responses at the close of class for a classroom participation grade.
